She Crab Soup
1/2 stick butter
One small onion
1 clove garlic minced
1/4 cup flour
1 cup vegetable or chicken broth
1/2 cup cooking sherry
3 cups half-and-half
3 cups heavy cream
2 teaspoons Worcestershire
1 teaspoon paprika
1 1/2 lbs crab meat
Crab roe (optional)
Salt and pepper
Melt butter in a large stock pot.
Dice onion. Add onion and minced garlic to melted butter and sautée until onions are clear.
Slowly add 1/4 cup flour and whisk 2-3 minutes. Stir in broth. Add sherry and stir.
Add half-and-half, heavy cream, Worcestershire, and paprika. Stir constantly and bring to a low boil. Add crab and roe if available. Reduce heat.
Season with salt, pepper, and hot sauce to taste.
